Marshmallow Rice Krispie Chocolate Blobs

9 squares of Almond Bark vanilla flavor
Microwave for 3 minutes
Add 12 oz. chocolate chips
Microwave for 1 minute
Stir until blended
Add 2 cups Rice Krispies and stir
let cool slightly
Add 3/4 bag of mini marshmallows
Stir and drop on wax or parchment paper
put in freezer or fridge to set.

Ham and Cheese Sliders

15 dinner rolls?
Ham
Swiss or Pepper Jack cheese

Dressing
1/2 cup butter
1 t Worcestershire Sauce
2-3 T minced onions
1 T scant poppy seeds
3 T mustard

Slice open dinner rolls, and spread dressing on either side.  Put ham and cheese in rolls.  Pack tightly into a 9x13 pan.  Pour remaining dressing over the top of the rolls (or enough dressing to cover the tops).  Cover with foil.  Bake in a 350 oven for 10-12 minutes.  Remove foil and bake until tops are brown and crispy.

Sesame Chicken

Ingredients
Chicken
  • 2 large egg
  • 3 Tbsp cornstarch (I used 4 T in first recipe)
  • 1 pinch each salt & pepper
  • 4 Costco boneless, skinless chicken breasts
  • 2 Tbsp vegetable oil (for frying)
Sauce
  • 1/4 cup soy sauce
  • 2 Tbsp water 
  • 1 T. toasted sesame oil
  • 3 Tbsp brown sugar
  • 3 Tbsp rice vinegar 
  • 2 inches fresh ginger, grated
  • 2 clove garlic, minced
  • 3 Tbsp sesame seeds (i used 4 T. and it was too much)
  • 2 Tbsp cornstarch
Instructions
  1. In a large bowl, whisk together the egg, 3 T cornstarch, and a pinch of salt and pepper.  Cut them into small 1 inch pieces. Toss the chicken in the egg and cornstarch mixture.
  2. Heat a large skillet with 2 Tbsp of vegetable oil over medium-high heat. When the oil is very hot (it should look wavy on the surface), add the chicken and all of the egg mixture. Cook the chicken, stirring only occasionally, until it is golden brown and cooked through (about 7-10 minutes). 
  3. While the chicken is cooking, prepare the sauce. In a small bowl stir together the soy sauce, water, sesame oil, brown sugar, rice vinegar, fresh ginger, minced garlic, cornstarch, and sesame seeds. (You can grate the ginger with a small-holed cheese grater).
  4. Once the chicken is cooked through and golden brown, pour the sauce over top. Toss the chicken to coat in the sauce. The sauce will begin to thicken as soon as it hits the hot skillet. Once the chicken is coated and the sauce thickened, turn off the heat.
  5. Serve the chicken over a bed of rice and sprinkle sliced green onions over top.

Zucchini Bread

Preheat oven to 325 degrees.  Prepare pans (makes 3 medium loaves or two large loaves).  Spray pans.  Cut out a piece of wax paper to fit the bottom of the pan.  Insert in pan and spray again lightly. 

3 eggs
1 cup oil
2 cups sugar
2 cups zucchini - squeeze out excess moisture
3 t. vanilla

Beat egg until light and fluffy.  Add oil, sugar, zucchini and vanilla.  Mix lightly but well.

3 cups flour
1 t. salt
1 t. soda
3 t cinnamon
1/4 t baking powder

Mix dry ingredients in a separate bowl and add to wet.  Mix until combined
Add

2+ cups chocolate chips

Bake at 325 degrees for one hour until toothpick inserted in the center comes out mostly clean.

Easy No-bake Peach Pie

5-6 fresh peaches sliced
1/2 cup peach juice with water to make up the difference
2/3 cup sugar
2-3 T cornstarch
pinch of salt
1 T butter
1/2 t cinnamon
1-9 inch graham cracker pie crust

Slice peaches and also cut slices in half cross wise.  Use a little lemon juice to keep peaches from going brown while you are cutting.  Put peaches in a colander over a liquid measuring cup.  Add any water you need to make up a half cup of liquid.  in a jar shake peach juice, sugar and cornstarch.  Pour into sauce pan.  Add the peaches, cinnamon, butter and salt.   Heat to boiling and simmer 5 minutes more until nice and thick.  Take off burner and let cool.  Pour into crust and put in fridge for at least three hours to set up.  Enjoy

Betsy's Rolls by Laurie

2 cups water 112-120 degrees F
Add 2 T yeast  (three packages)
Add 3/4 c. sugar

let sit till activates

1 c. softened butter - almost melted (30-60 seconds in the micro=almost melted but not hot)
add to butter
1 t. salt
1 t. baking powder
2 eggs
whisk together

add the yeast mixture (scrape well)

add 5-6 cups flour 
mix with dough hook, scraping frequently until the dough pulls from the sides and begins to form a ball

spray plastic bowl with oil
dump dough in and set on heating pad that is heated to Medium

cover with tea towel and raise to double (about an hour).  Dough should be rounding over the bowl.

Dump onto floured board and knead a little.  Form dough into rolls - crescents, rounds, etc.  Place on parchment lined jelly roll pan. Let raise 20-30 min.

Bake at 400 degrees for 9-15 minutes (depending on roll size) until Golden Brown

Bake at 400 degrees for 20 minutes until Golden Brown

Hilary's Chocolate Chip Cookies

Mix:
1 c butter flavored Crisco (I buy them by the stick)
3/4 brown sugar
3/4 sugar
2 eggs
2 tsp vanilla

In separate bowl mix:
2 1/4 C flour (11.25 oz.)
1 tsp salt
1 tsp baking soda

Stir flour mix into sugar mixture.  Add 2 cups chocolate chips.

Bake on ungreased sheet 375' for 9 minutes. (Some ovens are different.  9 is my oven.) Let cool a bit on rack before moving to counter. Eat!

*if time they are even better chilled in fridge but I rarely plan ahead for that:)
*you don't have to cook the whole batch. Save dough in fridge to cook next day.  Change temp to 350' and cook about same time.

Pot Roast in the Electric Frying Pan

Salt roast 1/2-1 hour before cooking.    Rub with mustard, nutmeg, pepper, garlic salt.  Heat 1-2 T. oil in electric frying pan to shimmering or almost smoking.  Sear  in hot oil on all sides.  Mix  6 Tbs. of Brown Gravy Mix (2 pkgs) with 2-3 cups cold water.  Pour gravy over the roast and cook on low for one hour.  Add large bowl full of veggies (carrots, potatoes, onions) cut in large chunks.  Carefully turn veggies around the roast so they are coated with the gravy.  Replace the lid and cook for one more hour until vegetables are tender.  Stir veggies occasionally, monitoring the temperature.

Turkey Rolls (Chicken Pillows)

2-3 cups diced cooked turkey (one roast)
8 oz package cream cheese - 1/3 less fat
1/2 medium onion chopped fine
1-2 cups chopped fresh mushrooms
salt pepper to taste
1/2 - 1 cup stuffing (optional)
3 pkg. crescent rolls ( 8 rolls each pkg.)

mix  all ingredients except rolls.  unroll rolls,but keep long narrow triangles together.  Pinch triangle cuts together.  Place one cup of filling on one rectangle.  Fold other rectangle over and pinch to seal. Makes 6 pillows. Bake 30-40 minutes at 350-370 (my oven is on the cool side)
