Hello Dollies

2 pkg. (3 cups pre packaged Crumbs)Graham Crackers Crushed
2 cubes butter (1 cup) melted
1- 1 1/2 pkg (12 oz. sized pkg.) semi sweet choc. chips
1/2 package  (12 oz. sized pkg.) butterscotch chips
2 cups unsweetened coconut or half pkg. (14 oz.)
1 cup nuts
2 cans eagle brand

Mix melted butter and crumbs in a jelly roll pan.  Pat down.  Spread coconut.  Sprinkle chips.  Sprinkle nuts.  Pour Eagle Brand evenly over the whole pan.  Cook at 350 degrees for 30-35 minutes until bubble around the edge and done in the middle.

Egg Casserole

12 eggs
1 1/2 cups milk
1/2 tsp seasoning salt
3-4 oz. chopped ham
slice mushrooms
1cup grated cheddar cheese
1/4 cup minced onion

Beat eggs, milk, and season salt until well blended.  Stir in ham, cheese, onion and mushrooms. Pour into a greased 9x13 casserole dish and bake at 325 degrees for 45 minutes.

Sugar Cookies-Aunt Dixie-The Soft Kind

1 cup white sugar
1 cup butter (softened)
cream together
2 eggs-room temp.
add one at a time and incorporate well
1 t. vanilla
In a separate bowl mix 
2 3/4 cup flour
3 t. baking powder
1/2 t. salt

Cream together the butter and sugar.  Add each egg one at a time.  In a separate bowl whisk together the dry ingredients.  Add to the wet and mix until combined.  Chill dough.  Roll out thick with a mix of flour and powdered sugar.  Bake at 400 degrees (in my oven) for 8-10 minutes.  Use parchment paper or lightly grease pans. Let cool on rack and then frost.

Double recipe
2 c. white sugar

5 1/2 c. flour
6 t. baking powder
1 t. salt

Ritz Cracker Chicken

4-5 Chicken Breasts
15-20 Ritz Crackers
1/4 t. salt scant
1/2 t. pepper
1/2 t garlic powder
1/4 c. parmesan
1/4 c. butter
1 egg

Crush the crackers in a ziploc bag then add salt, pepper, garlic powder and parmesan.  Mix egg in a dish for dredging and pour cracker mix in another dish for dredging.  Melt butter and pour a little in 9x13 pan.  Dredge chicken in egg then crackers and place in pan.  Pour remaining butter over the top.  Bake 30-35 minutes at 350 degrees.

2 cans beans undrained

Tamale Pie

Preheat oven to 350 degrees.
Brown
  • 1 pound Hamburger
  • 1 onion
  • 1 bell pepper
Add
  • 1 garlic clove minced
  • 1 T chili powder
  • 1/4 t. red pepper flakes
  • 1/4 t. black pepper
  • 1/4 t. ground cumin
  • 2 -8oz. cans tomato sauce
  • 1 -12oz. can corn drained
  • 1 can sliced olives drained
Cook 20-25 minutes and finish with 1 cup shredded cheese.  Pour mixture into pyrex pan.

Boil together 
  • 2 cups cold water
  • 3/4 c. cornmeal
  • 1/2 t. salt
Stir continuously until thick. Stir in 1 T. butter and pour over top of pies.  Bake for 30 minutes until bubbly.

Peanut Butter Chocolate Chip Cookies

1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1/2 cup peanut butter
1 t. vanilla
1 egg

1 cup flour
1/2 t. baking soda
1/2 t. salt 

2 cups milk chocolate chips
3/4 cup peanuts chopped (optional)

Heat oven to 350 degrees. Cream butter and sugars.  Add peanut butter, vanilla and egg.  Mix well. In another bowl mix all dry ingredients, then mix in with wet.  Add chocolate and peanuts.  Bake 10-15 minutes until barely golden.  Taste bests cool.

DOUBLE RECIPE
1 cup butter
1 cup sugar
1 cup brown sugar
1 cup peanut butter
2 t. vanilla
2 egg

2 cup flour
1 t. baking soda
1 t. salt 

3 cups milk chocolate chips
3/4 cup peanuts chopped (optional)

Ham Peas and Potatoes

3 lb. Red Potatoes
1 onion
1 ham steak
1/2 cup butter
1/2 cup flour
4 cups milk 
1/2 t. salt
1/2 t. pepper
1-2 cups frozen peas

Cut potatoes into 1-1/2 inch cubes boil until tender.  Set aside in fridge.  Saute chopped onion in the butter.  When soft add flour slowly and brown to make a roux.  Slowly add milk off the heat until smooth.  Add ham cut in cubes and any ham juices, salt and pepper.  Heat until boiling and thickened.  Boil for one minute.  Take off heat and add frozen peas and potatoes.  Keep warm on low.

Pineapple Blueberry Dump Cake

1 large can (20 oz.) crushed pineapple with juice
1 large can (20 oz.) blueberry pie filling
1 box yellow cake mix
1 cup chopped pecans
3/4 cup melted butter


Preheat oven to 350 degrees.
Spread the can of pineapple with the juice on bottom of 9 x 13 pan.  Cover the pineapple with the can of pie filling.  Sprinkle the cake mix evenly over the pie filling.  Sprinkle with chopped pecans.  Drizzle butter evenly over top.  Do not mix.  Bake uncovered for 45 minutes or until golden brown on top.  Serve warm.

Frozen Peanut Butter Bars




Ingredients:
1 cup butter or margarine
2 cups peanut butter - creamy or chunky
2 1/2 cups graham cracker crumbs (2 pkg graham crackers)
1 3/4 cups powdered sugar
2 cups chocolate chips, semi-sweet or milk chocolate
1/3 cup milk

Directions:
In a large saucepan, melt butter/margarine and peanut butter together over low/medium heat. Mix well. Remove from heat. Add graham cracker crumbs and powdered sugar, mixing well. Spread peanut butter mixture in a jelly roll pan (for thinner bars), or 9x13 pan (for thicker bars). Chill. When the peanut butter layer is firm, melt chocolate chips with milk over low heat. Spread over chilled peanut butter mixture. Chill again.


You can leave them in the pan or cut them into serving size bars. You can wrap them individually or freeze in layers in a large rigid container or gallon sized zip-loc freezer bags -- separate layers with wax paper so they don't freeze/stick together. Then freeze.

Eat straight from freezer, or thaw slightly. You can also keep the whole pan in the fridge if they are going to be eaten right away.

*I usually line the pan with wax paper before spreading the peanut butter mixture in the pan, it just makes it easier to slice and pop them out of the pan that way. You can use a 50/50 mixture of semi-sweet and milk chocolate chips or just whatever you have on hand. They are good no matter what.

Molasses Cookies

1 1/4 cup Oil
2 cups sugar
1/2 cup Molasses
2 eggs

3 1/2 cups flour
4 t. baking soda
1 t. cloves
1 t. ginger
2 t. cinnamon


Mix dry and then wet, then mix together (Batter will be thick).  Roll in to balls and then roll in sugar.  Bake at 350 for 10 minutes until crinkled all over.

Oh Boy, Waffles!

This is from Tami Ackroyd in the Pasco 1st ward Relief Society Cookbook

2 1/4 cup (11.3 oz) flour
4 tsp Baking Powder
3/4 tsp. salt
1 1/2 T Sugar
whisk together

In measuring cup
2 beaten eggs
2 1/4 cup milk
1/2 cup Vegetable Oil

Add to dry ingredients, barely stir
heat the Waring Waffle Iron to 5
Makes approx. 6 waffles.

Meatloaf

1 lb. hamburger
3/4 c.oatmeal
2 egg
1/2-1 onion
2 T. worcestershire sauce
1 t. salt
1/2 t. pepper
1/2 t. garlic powder

Mix with fingers, form into a ungreased bread pan.
Cook in NuWave for 25-30 minutes at 1" until 160 degrees
Cook in oven at 375 degrees for 45-60 minutes until 160 degrees

Shoyu Chicken

Crockpot Version
2 1/2 c. Soy Sauce
2 1/2 c. Water
2-3 cups Brown Sugar
15 slices of ginger
4-5 garlic cloves
 Fill crockpot with boneless skinless chicken legs.
Cook for 4-6 hours

Lasagna

1 lb. hamburger - brown and drain
2 pkg spaghetti sauce mix
2 cans tomato sauce
2 cups water
bring to a boil and simmer
boil 6-8 lasagna noodles until almost cooked.  lay out on foil
in a greased 9x13 pyrex layer:
  • sauce
  • noodles
  • cottage cheese 
  • sauce
  • cheese (mozzarella/cheddar)
  • noodles
  • cottage cheese
  • sauce
  • cheese
Bake at 375 degrees until bubbly (about 30 min)
if the pan is really full put it on top of a cookie sheet

Sweet and Sour Chicken

4 Chicken Breast cut in thirds
garlic salt
black pepper
2 beaten eggs
1/2 cup flour

SAUCE:
3/4 cup sugar
3 1/2 T. ketchup
1/2 cup vinegar
1/2 cup chicken broth
1 T. soy sauce

Double recipe
1 1/4 c. sugar
1/2 cup ketchup
1 cup vinegar
1 cup chicken broth
2 T. soy sauce

Sprinkle chicken with garlic salt and pepper.  Let stand for one hour or more in refrigerator.  Preheat oven to 325 degrees.  Pat chicken dry, dip in egg, then dredge in flour, shake off.  Brown chicken on each side in 1/4 c. hot oil (heat up to 5 or 6 on my stove).  Place in baking dish.  Cover in the following sauce:  mix sugar, ketchup,vinegar, chicken stock, and soy sauce in saucepan and heat.  Pour over chicken.  Bake uncovered for 30-40 minutes.  Turn chicken once or twice.  Serve with rice.

Chinese Chicken Salad

Two bags of cabbage or coleslaw mix
4-6 green onions chopped
1/4 c. sesame seeds (toast in dry frying pan)
1/2 c. raw sunflower seeds (toast in dry frying pan)
1/2 c. slivered almonds (toast in dry frying pan)
1 pkg. Costco already cooked and sliced chicken-cut into cubes

2 pkgs.crumbled ramen noodles fried in 3 T. of butter serve on the side

Dressing
1/3 c. soy sauce
1/3 c. vinegar
3 T. splenda
1/2 t.salt
1/4 t. pepper
1/2 c. oil
1 t. sesame oil
1 T. parsley

Ham and Bean Soup

1 pound navy beans
3 cans chicken broth
4 carrots (1 lb. of baby carrots)
2 medium potatoes
3 stalks celery
1 medium onion
2 cups cubed ham
2 bay leaves
1 tsp. salt
1 tsp. pepper


Cook on low for 6-8 hours

Beef Stroganoff

1 can Cream of Mushroom Soup
1 brick cream cheese
1 diced large onion
2-4 T. Worcestershire Sauce
1/2 c. Water with beef broth
Garlic Salt to sprinkle the meat
1 t. Garlic Salt
Egg noodles

Salt stew meat with Garlic Salt
Let sit for 15-30 minutes
Heat up 1 T oil in the instant pot on saute medium
Heat up 1 T oil in large frying pan
Brown the stew meat in both places
Add all stew meat to the instant pot
throw in some onion and Worcestershire sauce
Add the 1/2 c. beef broth to instant pot
set instant pot on high pressure for 15 minutes
Brown the chopped onion in the frying pan
saute 1 pkg sliced mushrooms
add the cream of mushroom soup
add the Worcestershire sauce
add cream cheese 
thin some with milk
Boil water and cook egg noodles
When instant pot is 10 minutes past time, release the pressure
Add juice from the instant pot to the sauce until desired consistency and flavor.
Add sour cream if you want



Serve over egg noodles, or rice, or potatoes

Baked Berry Oatmeal

This makes a hearty breakfast and reheats well.


2 1/2 cups oatmeal
1/4 cup oat bran
1/4 cup steel cut oats
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup brown sugar
1 egg
2 cups milk
1/3 cup applesauce (one individual pre-packaged cup is 1/3 cup)
1/4 cup oil
2 cups frozen berry mixture


Mix together all the dry ingredients.  In a separate bowl, beat egg and add milk, applesauce and oil.  Combine wet ingredients with dry.  Pour into a lightly greased 2 quart baking dish.  Bake uncovered at 400 degrees for 15 minutes.  Stir in berries and bake an additional 15-20 minutes or until just barely golden on top.  Serve with milk or cream.

1 cup flour
1 T. baking powder
1/2 t. salt
1 T. sugar
stir
1 egg
3/4 cup milk
2 T. oil
Mix  all together. Cook on Griddle.  cakes 6-8 pancakes.  Batter will be fairly thick and lumpy.  Add a tiny bit of milk to loosen.


DOUBLE RECIPE
2 cup flour (10 oz.)
2 T. baking powder
1 t. salt
2 T. sugar
stir
2 egg
1 1/2? cup milk
1/4 cup oil
 Mix  all together. Cook on Griddle.  cakes 12-14 pancakes.  Batter will be fairly thick and lumpy.  Add a tiny bit of milk to loosen.

Aunt Pat's Dip

2 cups cottage cheese
1/2 cup mayonnaise (best foods)
1 T minced onion (or more) 1/4 large onion
1 T. dried Parsley
2 T dill weed
1/2 t. celery salt
1/4 t onion powder
Pinch sugar

Mix together and set in fridge.  Best if it can sit for a couple of hours before serving.

Big Oven Meatballs

1 pound hamburger
1/2-1 chopped onion
1/4 c corn meal
1/2 t salt
2 t (generous) dry mustard
2 t (generous) chili powder
1/2 cup milk
1 egg


Heat a tablespoon of oil in a non-stick frying pan.
Mix all the ingredients with your hands.  make a large meatball (fills one cupped hand) roll in flour.  Brown the meatballs on all sides.  Pour a little spaghetti sauce in the bottom of a pyrex pan.  Place the browned meatballs in the pyrex.  Cover the pan with foil and bake for one hour at 350 degrees.

Lipton Soup Potatoes

Seasoned Potatoes
> 2.5 lbs. of Red Potatoes
> 2 packets of Onion Soup Mix
> 1/4 cup of Olive Oil
>
> Wash potatoes and cut into 1-1/2" chunks. Mix soup w/ oil and toss with the potatoes.
Bake at 425 degrees for 35 minutes. Stir 4-5 times during baking.
