1 cup white sugar
1 cup butter (softened)
cream together
2 eggs-room temp.
add one at a time and incorporate well
1 t. vanilla
In a separate bowl mix
2 3/4 cup flour
3 t. baking powder
1/2 t. salt
Cream together the butter and sugar. Add each egg one at a time. In a separate bowl whisk together the dry ingredients. Add to the wet and mix until combined. Chill dough. Roll out thick with a mix of flour and powdered sugar. Bake at 400 degrees (in my oven) for 8-10 minutes. Use parchment paper or lightly grease pans. Let cool on rack and then frost.

Ritz Cracker Chicken
4-5 Chicken Breasts
15-20 Ritz Crackers
1/4 t. salt scant
1/2 t. pepper
1/2 t garlic powder
1/4 c. parmesan
1/4 c. butter
1 egg
Crush the crackers in a ziploc bag then add salt, pepper, garlic powder and parmesan. Mix egg in a dish for dredging and pour cracker mix in another dish for dredging. Melt butter and pour a little in 9x13 pan. Dredge chicken in egg then crackers and place in pan. Pour remaining butter over the top. Bake 30-35 minutes at 350 degrees.

Peanut Butter Chocolate Chip Cookies

2 cups milk chocolate chips
3/4 cup peanuts chopped (optional)
Heat oven to 350 degrees. Cream butter and sugars. Add peanut butter, vanilla and egg. Mix well. In another bowl mix all dry ingredients, then mix in with wet. Add chocolate and peanuts. Bake 10-15 minutes until barely golden. Taste bests cool.

Ham Peas and Potatoes
3 lb. Red Potatoes
1 onion
1 ham steak
1/2 cup butter
1/2 cup flour
4 cups milk
1/2 t. salt
1/2 t. pepper
1-2 cups frozen peas
Cut potatoes into 1-1/2 inch cubes boil until tender. Set aside in fridge. Saute chopped onion in the butter. When soft add flour slowly and brown to make a roux. Slowly add milk off the heat until smooth. Add ham cut in cubes and any ham juices, salt and pepper. Heat until boiling and thickened. Boil for one minute. Take off heat and add frozen peas and potatoes. Keep warm on low.

Pineapple Blueberry Dump Cake
1 large can (20 oz.) crushed pineapple with juice
1 large can (20 oz.) blueberry pie filling
1 box yellow cake mix
1 cup chopped pecans
3/4 cup melted butter
Preheat oven to 350 degrees.
Spread the can of pineapple with the juice on bottom of 9 x 13 pan. Cover the pineapple with the can of pie filling. Sprinkle the cake mix evenly over the pie filling. Sprinkle with chopped pecans. Drizzle butter evenly over top. Do not mix. Bake uncovered for 45 minutes or until golden brown on top. Serve warm.
