Hashbrown Casserole

couple cups of hashbrowns
fry a little 
put in bottom of 9x13 pyrex
saute 1 lb hamburger and one chopped onion
add one can cream of mushroom soup
one can other cream soup
two cups of peas
pour over the hashbrowns
cover in cheese
heat in oven

Cake Mix plus

1 cake mix

3 eggs

1/3 c oil

2 tsp vanilla

1/2 c milk

2/3 c sour cream

Mix all together

Beat on medium high for 2 minutes

Bake 350 for?

Cream Cheese Frosting

 8 oz. Cream Cheese

1/2 c butter room temp

2 tsp. Vanilla

Mix

3-4 cups powdered sugar

If it’s too thick add 1 T milk

Brownies from Amy Olson

 2/3 c cocoa

1 tap vanilla

1 cup melted butter

Mix

Add

2 cups sugar

4 eggs

Add one at a time and mix

In a sifter:

1 cup flour

1/2 t baking powder

1/2 t salt

Add and mix

Add 1 cup chocolate chips

Pour into 9x13 pan 

Bake for 30-40 minutes at 350 degrees


Frosting

1/2 c butter

2/3 c cocoa powder

3 c powdered sugar

1/3 cup

1 t vanilla

Melt butter, stir in cocoa until smooth. Alternately add powdered sugar and milk, beating on medium speed to spreading consistency. Stir in vanilla

Sweet Chex Mix

 1 box golden grams (14 oz.)

1 box rice Chex (14 oz.)

2 cups dry roasted peanuts unsalted

2 cups craisons

3 cup wide flake unsweetened coconut

Mix all dry ingredients in a bowl

3 cups butter

2 cups light kyro syrup

2 cups sugar

Bring to full boil for 3 minutes

Pour over dry ingredients in large bowl, mix and spread on wax paper. Let sit for a few minutes.

Latkes for Hanukkah

 6 good sized russet potatoes

1 large onion

Grate with the large holes

Squeeze out super dry with a tea towel or cheesecloth

In a bowl mix 

1/2 cup flour or 1 cup?

1 tsp baking powder

Add dried potatoes and onion gratings

Add 4 eggs

Mix with hands

Use heavy bottomed frying pans

Fill with 1/4 inch oil 

Heat oil to 4 on my stove

Put approx. 1/3 cup batter in the oil

Flatten

Fry until dark gold on bottom

Flip, salt, and cook second side. Drain on paper towels

Keep warm on rack in 200 degree oven

EAT!

Park City Beef Stew-Julie

1 pound beef
8 medium carrits, sliced thick
8 medium potatoes cubed
2 cups chopped celery
1 medium onion, cut in big chucnks
1 bay leaf
2 cans of cream of mushroom soup
1 - 6 ounce can tomato sauce
1 pkg. Lipton onion soup mix
1/2 tsp. ground black pepper

Brown beef in 2 tablespoons of oil for 3-5 minutes.  Coat a large crock pot mith non-stick spray.  Layer beef, carrots, potatoes, onion and celery into crock pot.  Mix together soups, tomato sauce, dry soup mix and ground pepper.  Pour over beef and vegetables.  Cover and cook on low for 8-10 hours on until vegetables and beef are tender.
Options:  add 2 cups frozen peas, or 1 cup sliced mushrooms during the last hour.

Ham and Noodle Casserole

2 cups egg noodles cooked
1/4 cup butter
1/4 cup flour
3 cups milk?
1 cup cheese
1/2 onion chopped
couple stalks of celery chopped
carrots thinly sliced ?
frozen peas
2 cups chopped ham
1 cup chopped chicken (opt.)
1/2 t salt
1/2 t. pepper
more cheese on top

saute onions celery and carrot in the butter.  Add the flour.  Brown.  Slowly add the milk off heat.  Add the ham and chicken.  Slowly bring to a boil.  Boil for one minuet until thick.  Add the cooked noodles and frozen peas.  Mix.  Pour into a greased 9x13 pan and top with grated cheese.  Bake until bubbly and cheese is melted.  15-20 minutes

Spaghetti

Brown 2 pounds of hamburger
Add 6 T spaghetti sauce mix
Stir and heat
Add 3 6 oz. cans of tomato paste and 4 cups of water?
Stir and simmer
Add 2-3 tbsp of brown sugar 
2 tbsp of butter 
Simmer
Stir and serve

Cathy's Brownies

2 cups sugar
1 cup butter
2 t. vanilla
4 eggs
1 1/3 cup flour (6.7 oz.)
3/4 cup cocoa
1 cup chopped nuts optional
1 t. baking powder
1 t. salt

Cream sugar and butter.  Add eggs and vanilla.  Mix.  In a separate bowl mix cocoa, flour, baking powder and salt.  Add to wet ingredients and mix.  Spread in a greased 9x13 pan.  Bake at 350 degrees for 25-30 minutes.

Cheesy Ham and Potato Soup

4-5 cups potatoes peeled and diced
1/2 cup chopped celery
1/2 cup chopped onion
1-2 cups chopped ham
2 cans chicken broth
ham consomme if you have it
1/2 t. black pepper
1/2 cup butter
1/2 cup flour
4 cups milk
1 can of corn
1 cup of shredded cheese
carrots?

1.  Boil potatoes in salted water
2. Heat celery, onion, ham, consomme, pepper, corn and chicken broth in big pot
3. Add boiled potatoes
4.  In a pan melt butter, add flour, brown, slowly add milk
5. Bring roux to a low boil and boil for one minute until thick
6. Add cheese until melted
7.  Add the cheese sauce to the soup.

Braided Bread

1/2 cup warm water
2 pkg yeast
dissolve
1 1/2 cups luke warm milk
scald milk
add:
1/2 c sugar
2 tsp. salt
let cool
add 2 eggs and mix
1/2 cup soft shortening or margarine
1/2 cup of flour
add in yeast mixture
add 2 cups flour in mixer
move to board and knead in rest of flour until feels right
place in greased bowl covered
rise in warm place until double
punch down (may add 2 Tbs orange or lemon zest or mace or nutmeg
Raise again
Braid and raise once more
Bake for 20 minutes at 350 degrees.

Cinnamon Cake

1/2 cup butter softened
1 cup sugar
Cream together
2 eggs
1 t. vanilla
1 t. lemon juice
Mix
2 cups flour
1 t. baking soda
Mix
1 cup sour cream
Mix

  Sprinkle the following mixture on top, then swirl in.
1/2 cup brown sugar
3 t. cinnamon
1/2 cups chopped nuts
Mix into a crumble mixture

Use a bundt or 9x13
Bake 350 degrees fro 30-40 minutes.

Bran Muffins

2 cups All Bran Cereal
1 cup boiling water

Stir and let stand

Cream:
3/4 cup brown sugar
1/2 cup Splenda
1/2 cup butter
3 eggs

Add:
2 1/2 cups whole wheat flour (white flour also works)
2 1/2 t. baking soda
1/2 t. salt
1 t. cinnamon
1/2 t. nutmeg
1 cup All Bran cereal
2 cups buttermilk (or milk with lemon or vinegar)

Add cereal and water mixture

Optional:
raisins
almonds
oatmeal
coconut
chocolate chips

Bake at 400 degrees for 15-20 minutes
Batter will last in fridge for 6 weeks.

Christmas Tree Bread

2 c. warm water
1/3 c. sugar
2 pkg. yeast
wait until yeast is dissolved
with mixer beat:
3 eggs
1/3 cup margarine, melted
add 2 cups flour
2 t. salt
yeast mixture
Beat well, then gradually add
4 1/2-5 c. flour.  Should be sticky
Beat with bread hooks.  Let rest 20 minutes
Roll out dough into large rectangle.  Slice very cold butter and place on middle third of rectangle.  Fold one side over and repeat butter slices.  Fold the other third over and seal the edges.  Roll out and fold several times.  Repeat.  Use 2-3 cubes.  Place in covered container in fridge until ready to use, at least one half hour.  Roll dough out and cut into Triangle for base.  Use a doughnut cutter, and place the rounds in rows on the tree, and cut a star for the top, and a base for the tree.  let rise and bake at 350 degrees for 15-20 minutes.  Watch carefully.  When barely warm, fill circles with red jelly and serve.

Strawberry Spinach Salad

1 pkg. fresh spinach
1/4 lb. strawberries sliced
1 small red onion sliced into rings
1/2 cup almond slivers (optional)

Dressing:
1/4 cup oil
3 T red wine vinegar or rice vinegar
2 T sugar or splenda
1 1/2 t. poppy seeds
1/2 t. dry mustard
1/2 t. salt

Tuck Shop Cinnamon Buns

An electric mixer is needed for this recipe as it requires a lot of beating.  If the dough is too soft to handle, add a bit more flour. However, the less flour used, the better the buns will be.

Soften 2 packages instant yeast or 1 oz. fresh yeast in 1/2 cup warm water and 2 T sugar.  Let mixture set until the yeast is dissolved (about 10 minutes).

In a large bowl, put 2 cups boiling water, 3 T. margarine, 2 t. salt and 3 T. sugar.  Let the margarine melt and the mixture  cool a bit.  Then add 2 cups all purpose flour.  Beat this mixture hard until very smooth and creamy (about 5 minutes).  Then add the yeast mixture, 3 eggs, and 3 1/4 cups additional flour.  Continue beating until the dough is doubled in bulk (about 1 hour).

While the dough is rising, in a flat pan melt 1/3 c. margarine and set aside to cool.  In a flat dish mix 1 cup white sugar and 1 1/2 t. cinnamon.  Turn the raised dough onto a lightly floured work surface.  Let the dough set 5-10 minutes to "firm up."

Cut the dough into pieces about the size of an orange.  Dip each piece of dough first in the melted margarine, then coat it well in the cinnamon-sugar mixture.  Stretch the dough piece until it is 4-5 inches long and form it into a simple knot.  Place the knots side by side in a 9" x 12" x 2" pan.  Be sure the pan is 2" deep and allow a 3" square for each bun.)  Let the finished buns rise for ab out 45 minutes.  Bake at 375 degrees for 30 minutes.  Makes 18 buns.

Oven Brown Rice

1 can French Onion Soup
1 can water
1 can rice
1 can beef broth (Campell's size)
1 can water
1 can rice

Cover tightly with foil
bake at 425 degrees fro 90 minutes

Cyndi's Fudge

2 cups chocolate chips
1 can sweetened condensed milk
microwave 2 minutes
stir
3 more minutes
add  1/2 bag mini marshmallows
stir/stir/stir
add rest of marshmallows
stir
add nuts
pour into a buttered 9x13 pan
refrigerate

Sweet Potato Casserole

6 cups cooked sweet potatoes (about 3 large)
3/4 cup brown sugar
1/4 cup butter softened
1 t. vanilla
2 eggs
1/3 cup milk
Mix until creamy put in greased 9 x 13 pan 

Topping:
2/3 cup brown sugar
1 cup chopped pecans
1/3 cup flour
1/4 cup butter
Mix until crumbly and spread on top of casserole

Bake at 350 degrees for 25 minutes
